In shops you use Sie. The classic opener from the person behind the counter is "Was darf es sein?" or "Bitte schön?" — both mean "what can I get you?"

At the bakery ​

Formal (Sie) — a quick morning purchase.

No, thanks. That's all.
Good to know: Ich hätte gern … (I'd like…) is the most polite way to ask for something — even softer than "ich möchte". Sonst noch etwas? (anything else?) → Das ist alles (that's all) is the standard close.

In a clothing shop ​

Formal (Sie) — checking a price and a colour.

Excuse me, how much is this T-shirt?

Es kostet zwölf Euro.

Good to know: ask the price with Was kostet …? (singular) or Was kosten …? (plural). Useful follow-ups: Haben Sie das in …? (do you have this in…?), welche Größe? (what size?), Kann ich es anprobieren? (can I try it on?).
